Colli Di Poianis Sauvignon Blanc Colli Orientali Friuli

Grapes from our oldest vineyard are manually harvested and gently pressed. Fermentation of the free-run grape juice occurs after 5 days of cold static settling, with twice-daily stirring. Most of the juice ferments in controlled temperature stainless steel tanks, while a small percentage ferments in French oak barriques. Regular lees stirring extracts maximum aroma, enhancing structure and natural stability. After 9 months on lees, the wine is bottled.
