Grapes are manually late-harvested from our oldest vineyard, destemmed, and gently pressed. Fermentation of the free-run grape juice occurs after 3 days of cold static settling. Fermentation with added whole berries takes place in controlled temperature stainless steel tanks. Regular stirring of the lees enhances aroma extraction, structure, and natural stability. After 9 months on lees, the wine is bottled.
