Grapes from our oldest vineyard are manually late-harvested and gently pressed. Fermentation of the free-run grape juice occurs after 5 days of cold static settling. Part of the juice ferments in controlled temperature stainless steel tanks, while another part ferments in acacia tonneaux. Regular lees stirring extracts maximum aroma, enhancing structure and natural stability. After 9 months on lees, the wine is bottled.
