Hand-picked grapes from 80-120-year-old vines are transported at 6°C to prevent damage. At the winery, they undergo a second selection before fermentation with indigenous yeasts at 30°C. Maceration lasts 35 days, followed by 17 months in French and Romanian oak barrels, with 5 rackings before bottling.
